Nicknamed red gold, saffron is often called the most precious spice in the world. Saffron from Taliouine, a small town in southern Morocco nestled between the High Atlas and the Anti-Atlas mountains, is renowned as one of the finest. Our pure Taliouine saffron stands out for its deep red color, intense aroma and delicate, slightly honeyed flavor.
An entirely hand-harvested crop
Every fall, the purple flowers of the saffron crocus are picked one by one at dawn, before they fully open. The three red stigmas of each flower are then separated by hand and dried. It takes about 150,000 flowers to produce one kilogram of saffron: this painstaking work is what makes it so valuable.
How to use pure Taliouine saffron
- Infuse it: soak a few threads for 15 to 20 minutes in a little warm water, milk or broth before adding it to your dish. This releases all its color and aroma.
- Use it sparingly: a few threads are enough for a dish that serves four.
- Recipe ideas: tagines, couscous, pastilla, rice, risotto, paella, bouillabaisse, but also desserts, custards and pastries.
How to store your saffron
Store it in its tightly closed container, away from light, moisture and heat, so that it retains all its fragrance.
